Tofu Cheesecake

Ingredients
  Eggs 2
  Tofu 1 Pound
  Honey 1 Cup (16 tbs)
  Cream cheese 8 Ounce
  Lemon rind 1 Tablespoon
  Vanilla 1 1⁄2 Teaspoon
  Salt 1 Dash
Directions

Mix in a blender until smooth, 2 EGGS, VERY FRESH TOFU CREAM CHEESE, SOFTENED, LEMON RIND, VANILLA and DASH OF SALT. Turn into the prepared crust or a lightly buttered 8" baking dish. Bake at 350 F for 1 hour. Chill thoroughly.
