Lemon Cheesecake Filling

|Egg yolks||8 , beaten|
|Lemon juice||1 Cup (16 tbs)|
|Sugar||2 1⁄2 Cup (40 tbs)|
Beat all ingredients and 1/2 cup hot water together well in double boiler.
Cook, stirring constantly, over boiling water until of spreading consistency.
Spread between layers of cake.
