1. Prepare a grease muffin tray.
2. Preheat the oven at 183 degree C / 360 degree F.
3. In a bowl combine the cream cheese, eggs, stevia sweetener, lemon juice and vanilla extract.
4. Mix all the ingredients well with a hand blender.
5. Once done pour the mixture into the muffin tray.
6. Bake it in the preheated oven for 20 minutes.
7. Serve the Low-carb Mini Cheese Cake after a health meal.
