Secret Harbor Cheesecake
|Fine graham cracker crumbs||1 1⁄4 Cup (20 tbs)|
|Firmly packed brown sugar||1⁄3 Cup (5.33 tbs)|
|Butter||1⁄4 Cup (4 tbs)|
|Cream cheese||1 Pound|
|Granulated sugar||1 1⁄4 Cup (20 tbs)|
|Vanilla extract||2 Teaspoon|
|Almond extract||1 Teaspoon|
|Sour cream||1 1⁄2 Cup (24 tbs)|
|Chocolate shavings||2 Tablespoon (Sweet / Semi Sweet)|
Have butter, cheese, and eggs at room temperature.
Mix crumbs, brown sugar, and butter with hands.
Press on bottom of 9-inch springform pan.
Bake in preheated moderate oven (350°F.) for about 10 minutes.
Cream cheese well.
Gradually beat in 2/3 cup granulated sugar.
Then add eggs, one at a time, beating well after each addition.
Add 1 teaspoon vanilla and 1/2 teaspoon almond extract.
Pour into prepared pan.
Bake in moderate oven (350°F.) for 35 minutes, or until set.
Remove from oven and increase heat to extremely hot (500°F.).
Mix sour cream, 1/2 cup granulated sugar, 1 teaspoon vanilla, and 1/2 teaspoon almond extract.
Spread on cake.
Return to oven and bake for 5 minutes.
Cool, then chill.
Remove rim of pan, and sprinkle shaved chocolate around edge of cake.
