Lemon Cheesecake

Ingredients
  Neufchatel cheese package 8 Ounce
  Fresh lemon juice 1 Tablespoon
  Grated lemon peel 1 Tablespoon
  Eggs 2
  Fructose 1⁄4 Cup (4 tbs)
  Graham cracker crumbs 1 Teaspoon
Directions

In medium mixing bowl microwave cheese at 50% (Medium) 1 to 2 minutes, or until softened.
Add lemon juice, peel, eggs and fructose.
Beat at medium speed of electric mixer 2 minutes, or until well blended.
Pour into 9x5-in loaf dish.
Sprinkle graham cracker crumbs on top.
Shield ends of dish with 2-in wide strips of foil.
Microwave at 50% (Medium) 5 to 11 minutes, or until center is soft set, turning 1/4 turn every 2 minutes.
Chill.
