Slim Line Cheesecake
|Unflavored yogurt||1 Cup (16 tbs)|
|Lemon zest||1 Tablespoon (1/2 By 2 Inch Strip, Colored Part Of The Peel)|
|Sugar||1 Cup (16 tbs)|
|Low fat cottage cheese||4 Cup (64 tbs)|
|All purpose flour||3 Tablespoon|
|Sliced strawberries/Almond praline||2 Tablespoon (For Garnish)|
Place yogurt in a large mixing bowl.
Tear zest in thirds.
Using metal blade, process zest and sugar until zest is finely chopped; add to yogurt.
Process cottage cheese, eggs, flour, and vanilla until smooth.
Add to yogurt and stir well.
Pour into a buttered 9-inch-square pan.
Bake in a 325° oven for 40 minutes or until cheesecake just begins to pull away from edges of pan.
Center should be slightly jiggly (it sets as it cools).
Garnish as desired.
