Luscious Gourmet Cheesecake
|Cream cheese||1 Pound|
|Castor sugar||8 Ounce|
|Plain flour||1 1⁄2 Tablespoon (Use 2 Dessertspoons)|
|Eggs||4 , separated|
|Sour cream||1⁄2 Pint|
|Lemon juice||1 Tablespoon (Extracted From 1 Fruit)|
|Sugar||1 1⁄2 Tablespoon (Use 2 Dessertspoons)|
Beat cream cheese until softened, combine with sugar, flour and salt, beat well.
Beat in the whole egg plus the 4 egg-yolks, sour cream and lemon juice.
Beat egg-whites until stiff but not dry, beat in extra sugar, fold into cream cheese mixture.
Pour into prepared crumb crust.
Bake in a moderately slow oven, Mark 3, 325°F., 1 1/4 to 1 1/2 hours.
Allow to cool in oven.
Refrigerate until firm.
