Brooks's Cheesecakes

  Butter 1 Pound
  Egg yolks 12 , well beaten
  Sugar 1 1⁄2 Pound
  Grated nutmeg 2 Teaspoon
  Rich pastry 1 , made with 1/2 butter, 1/2 lard

Cream butter and sugar together, add well beaten egg yolks and nutmeg.
Make a very thin short pastry using part butter and part lard in favorite pie pastry.
Line little muffin or cake rings with pastry; bake ,in moderate oven until slightly brown.
