Elegant Cheese Cake
|Zwieback crumbs||1 Cup (16 tbs)|
|Melted butter||3 Tablespoon|
|Cream cheese||24 Ounce, softened (Three 8 Ounce Packages)|
|Light rum/1 tablespoon vanilla||3 Tablespoon|
|Sugar||1 Cup (16 tbs)|
|Sour cream topping||1⁄2 Cup (8 tbs)|
|Commercial sour cream||1 Pint (2 Cups)|
Mix together the crumbs, sugar, cinnamon, and melted butter.
Press into the bottom of an 8 or 9-inch spring form pan in an even layer.
Cream cheese, salt, and rum together until soft and creamy.
Beat the egg whites until they form soft peaks, then gradually beat in the sugar to make a meringue.
Fold egg white mixture into the cheese until well blended.
Turn into the spring form pan.
Bake in a moderate oven (350°) about 25 minutes.
Remove from oven; increase oven temperature to 450°.
Combine sour cream with sugar and salt; spread over top of cake.
Return to oven for 4 to 5 minutes, until cream is set.
Remove from oven and cool until cold.
