Strawberry Cheesecake Bars
|Cold butter||1⁄2 Cup (8 tbs)|
|Date sugar||1⁄2 Cup (8 tbs)|
|Whole wheat pastry flour||1 Cup (16 tbs) (whole wheat)|
|Cream cheese||8 Ounce|
|Honey||1⁄3 Cup (5.33 tbs)|
|Fresh strawberries||1 Cup (16 tbs), chopped|
Preheat oven to 350°F.
In a food processor or with a pastry blender, combine butter, date sugar, and flour until mixture resembles coarse crumbs.
Reserve 3/4 cup mixture, and press remainder of crumbs into an 8 X 8 X 2-inch pan.
Bake on middle shelf of oven for 10 minutes.
In a large bowl, beat cream cheese until fluffy.
Beat in honey and egg.
Fold in strawberries, and spread mixture on top of crust in pan.
Sprinkle with reserved crumb mixture, and bake on middle shelf of oven for 20 minutes.
Cool before cutting into 2-inch squares.
