Cheese Cake Tomaselli

Ingredients
  Egg yolks 5
  Sugar 1 Cup (16 tbs)
  Salt 1⁄2 Teaspoon
  Grated lemon peel 1⁄2 Teaspoon
  Heavy cream 1⁄4 Cup (4 tbs)
  Flour 1⁄4 Cup (4 tbs)
  Farmer cheese 1 Pound
  Egg whites 5 , beaten to stiff (Not Dry, Peaks)
Directions

Butter an 8-inch springform pan and coat it lightly with fine dry bread crumbs.
Beat egg yolks with sugar, salt, and lemon peel until thoroughly blended.
Mix in a blend of cream and flour.
Force cheese through food mill or sieve; combine with the egg yolk mixture.
Beat thoroughly until smooth.
Fold in the beaten egg whites just until blended.
Carefully turn into prepared spring-form pan.
Bake at 300°F 1 to 1 1/4 hours, or until cake is lightly browned and pulls away from sides of pan.
Cool cake on a rack about 15 minutes.
Then remove the rim of springform pan and cool completely.
Sprinkle surface with a mixture of cinnamon and sugar.
