Cheese Cake Tomaselli
|Sugar||1 Cup (16 tbs)|
|Grated lemon peel||1⁄2 Teaspoon|
|Heavy cream||1⁄4 Cup (4 tbs)|
|Flour||1⁄4 Cup (4 tbs)|
|Farmer cheese||1 Pound|
|Egg whites||5 , beaten to stiff (Not Dry, Peaks)|
Butter an 8-inch springform pan and coat it lightly with fine dry bread crumbs.
Beat egg yolks with sugar, salt, and lemon peel until thoroughly blended.
Mix in a blend of cream and flour.
Force cheese through food mill or sieve; combine with the egg yolk mixture.
Beat thoroughly until smooth.
Fold in the beaten egg whites just until blended.
Carefully turn into prepared spring-form pan.
Bake at 300Â°F 1 to 1 1/4 hours, or until cake is lightly browned and pulls away from sides of pan.
Cool cake on a rack about 15 minutes.
Then remove the rim of springform pan and cool completely.
Sprinkle surface with a mixture of cinnamon and sugar.
