Cottage Cheese Kugel
|Butter/Margarine||1⁄2 Cup (8 tbs)|
|Water||6 Cup (96 tbs)|
|Vegetable oil||2 Teaspoon|
|Uncooked medium noodles||4 Cup (64 tbs)|
|Cottage cheese||1 Cup (16 tbs)|
|Dairy sour cream||1 Cup (16 tbs)|
|White pepper||1⁄8 Teaspoon|
Preheat oven to 350Â°F (175Â°C).
Melt butter in an 11" x 7" baking dish; set aside.
Bring water to a rapid boil in a heavy 3 quart saucepan.
Add 1 teaspoon salt and oil.
Gradually add noodles, being sure water continues to boil.
Cook noodles uncovered until tender but firm, stirring occasionally.
Beat eggs in a large bowl.
Stir in cottage cheese, sour cream, 1 teaspoon salt and pepper.
Spread butter over bottom of baking dish.
Stir excess into cottage cheese mixture.
Add cooked noodles; toss to coat.
Spoon into prepared baking dish.
Bake in preheated oven until golden, 45 minutes.
May be served warm or cold.
