Crispy Cheese Crackers ( Tyrobisfota )
|Sesame seed||1⁄4 Cup (4 tbs)|
|All purpose flour||2 Cup (32 tbs)|
|Ground red pepper||1⁄2 Teaspoon|
|Grated kefalotyri cheese||1 1⁄2 Cup (24 tbs)|
|Butter||3⁄4 Cup (12 tbs), softened|
|Olive oil||1⁄4 Cup (4 tbs)|
|Egg yolks||2 , beaten (For Brushing)|
|Sesame seed||1 Teaspoon|
Combine 1/4 cup sesame seed, flour, salt, red pepper, and cheese.
Work in butter and oil, using hands.
Mix until dough holds together.
Roll dough out on lightly floured board.
Cut into small diamond shapes.
Transfer to cookie sheets.
Brush with egg yolks and sprinkle with sesame seed.
Bake at 350Â°F about 12 minutes, or until golden.
