Cheese Pascha From Lwow

An jewish festive dessert, this cheese pascha is cooked and chilled dessert made with eggs, cream, currants and cheese. Soft and delicious, the cheese pascha is a cooked and chilled dessert that is erved garnished with nuts and candied fruits.
  Whole egg 1
  Egg yolks 4
  Sugar 2 2⁄3 Cup (42.67 tbs)
  Whipping cream 1 Cup (16 tbs)
  Raisins/Currants 1 Cup (16 tbs)
  White farmer cheese 2 Pound
  Unsalted sweet butter 1⁄2 Pound
  Vanilla extract 1 Tablespoon
  Chopped blanched almonds 1 Cup (16 tbs)
  Grated orange peel 2 Tablespoon

Beat whole egg and egg yolks with sugar until thick and creamy.
Add half of cream.
Turn into a saucepan.
Heat almost to the boiling point, stirring constantly; do not boil.
Remove from heat.
Add raisins; cover.
Combine the rest of the cream, the cheese, butter, and vanilla extract in a large electric blender.
Blend until smooth.
Turn cheese mixture into a bowl.
Fold in the egg mixture.
Add almonds and orange peel.
Refrigerate 4 hours.
Place in a double thickness of cheese cloth.
Hang over a bowl in a cold place; let drain 24 hours.
Garnish with nuts and candied fruits as desired.
Serve cold.
Cut small slices.
