Fried Cheese (Saganati)
|Kefalotyri||1 (Kasseri Cheese)|
|Egg yolks||2 , mixed|
|Olive oil||1 Tablespoon|
|Lemons||2 , cut in quarters|
Dip cheese slices into egg yolk mixture, then into flour, coating each side evenly.
Shake off excess flour.
In a 10 inch skillet, heat a 1/4 inch layer of olive oil.
When the oil begins to smoke, add the cheese.
Fry first on one side, then on the other.
Remove from skillet and squeeze some lemon juice on each slice.
Allow 2 slices of Saganaki for each person.
