Molded Cheese Dessert
|Unflavored gelatin||2 Tablespoon (2 Envelopes)|
|Cold water||1 Cup (16 tbs)|
|Coffee||1 Cup (16 tbs) (Double Strength)|
|Pot cheese/Low fat cottage cheese||1 Pound|
|Vanilla extract||1 Teaspoon|
|Sugar||1⁄4 Cup (4 tbs)|
|Bay leaves||2 , broken i n half|
|Mint leaves/Watercress leaves||1 Tablespoon|
Sprinkle gelatin over cold water in a small skillet; let stand 5 minutes.
Heat, stirring occasionally, over low heat until dissolved (about 3 minutes).
Pour gelatin mixture into a food processor or blender; add remaining ingredients except bay leaves and mint.
Spoon mixture into a 1 quart mold.
Push bay leaf pieces into mixture.
Refrigerate covered 4 to 6 hours; unmold.
Garnish with mint.
