Rice With Gruyere Cheese

Ingredients
  Shortening 2 Tablespoon
  Onion 1 Medium, chopped
  Rice 1 Cup (16 tbs)
  Dry white wine 1⁄2 Cup (8 tbs)
  Chicken broth 1 1⁄2 Cup (24 tbs)
  Gruyere cheese 1⁄2 Cup (8 tbs), grated
Directions

Heat shortening and lightly tan onion.
Add rice, wine, and chicken broth.
Close cover and put pressure regulator in place.
When the regulator is rocking gently and pressure is reached, remove from heat.
Allow cooker to cool normally.
When pressure is fully reduced, open cooker.
Fold in the cheese until it has blended.
It will melt very quickly.
Serve at once.
