Homemade Soy Cheese
|Soy milk||3 Cup (48 tbs)|
|Lemon||2 , juiced|
Heat soy milk over hot water in double boiler.
Bring to boil.
Add lemon juice and stir only long enough to blend thoroughly.
Remove from heat.
Allow mixture to cool slowly with top saucepan remaining in hot water.
When mixture coagulates, strain through fine cheesecloth.
