Deep Dish Rhubarb Pie With Cream Cheese Pastry
|Sugar||1 Cup (16 tbs)|
|Light corn syrup||1⁄2 Cup (8 tbs)|
|Cream cheese||3 Ounce|
|Flour||3⁄4 Cup (12 tbs)|
Wash 2 lbs.of rhubarb and trim and cut into 1" pieces (6 cups).
Toss with 1/2 cup flour and turn into an 8" x 8" x 2" pan.
Sprinkle remaining flour over rhubarb.
Mix 1 cup sugar and 1/2 cup light corn syrup and bring to boil, stirring constantly.
Pour over rhubarb and dot with 1 tbs.butter.with white.
Cover with cream cheese pastry rolled 1" bigger than pan.
Turn under 1" and crimp against edge.
Bake at 425 degrees for 25 minutes.
Serve warm with whipped cream.
