Cottage Cheese Scrambled Eggs
|Eggs||6 , beaten|
|Cottage cheese||3⁄4 Cup (12 tbs)|
|Chives||1 Tablespoon, chopped|
|Freshly ground black pepper||1 Dash|
In mixing bowl beat eggs with a wire whisk or fork.
Add cottage cheese, milk, and seasonings.
Heat butter in medium skillet, keeping heat low.
Add egg mixture.
As it cooks, lift edges with a spatula to allow liquid to flow off the top.
Do not stir, but continue until eggs are set on top.
Turn skil let over to bring eggs out of pan onto the serving plate.
