Cottage Cheese Prune Salad
|Sliced maraschino cherries||1⁄2 Cup (8 tbs)|
|Small curd cottage cheese||2 Cup (32 tbs), sieved|
|Sour cream||1 Cup (16 tbs)|
|Confectioners sugar||3 Tablespoon|
|Pineapple chunks||1 Cup (16 tbs), drained|
|Cooked chopped prunes||1 Cup (16 tbs)|
|Banana||1 Large, sliced|
|Chopped blanched almonds||1⁄2 Cup (8 tbs)|
Drain cherries, reserving 2 tablespoons juice.
Combine all ingredients except sour cream and cherry juice.
Pour into trays that have been rinsed in cold water.
Let stand at room temperature for a few minutes before serving.
Serve with a mixture of sour cream and cherry juice.
