Cottage Cheese Filling
|Cottage cheese||1 Pint|
|Milk||1⁄4 Cup (4 tbs)|
|Lemon rind||1⁄2 Teaspoon, grated|
|Soy flour||2 Tablespoon|
|Lemon juice||3 Tablespoon|
|Eggs||2 , separated|
Blend cottage cheese with half the honey.
Ad flour, salt, egg yolks, milk, lemon rind and juice.
Beat egg whites stiff and blend with remaining honey.
Fold egg white mixture into cottage cheese mixture.
Turn into unbaked piecrust, Bake at 400Â° F. for 15 minutes, then at 325Â° F. for 45 minutes more.
