Cottage Cheese Filling

Ingredients
  Cottage cheese 1 Pint
  Milk 1⁄4 Cup (4 tbs)
  Honey 4 Tablespoon
  Lemon rind 1⁄2 Teaspoon, grated
  Soy flour 2 Tablespoon
  Salt 1⁄4 Teaspoon
  Lemon juice 3 Tablespoon
  Eggs 2 , separated
Directions

Blend cottage cheese with half the honey.
Ad flour, salt, egg yolks, milk, lemon rind and juice.
Beat egg whites stiff and blend with remaining honey.
Fold egg white mixture into cottage cheese mixture.
Turn into unbaked piecrust, Bake at 400° F. for 15 minutes, then at 325° F. for 45 minutes more.
