Blue Cheese Tenderloin Steaks
|Beef tenderloin||4 , cut 1 inch thick recipe may also be prepared using beef top loin steaks cut 0.75 inch thick|
|Cream cheese||2 Tablespoon, softened|
|Crumbled blue cheese||4 Teaspoon|
|Low fat plain yogurt||1 Cup (16 tbs)|
|Minced onion||2 Teaspoon|
|Garlic||1 Clove (5 gm), halved|
|Salt||1⁄2 Teaspoon, divided|
|Chopped parsley||2 Teaspoon|
Combine cream cheese, blue cheese, yogurt, onion and pepper; reserve.
Rub each side of beef steaks with garlic.
Place steaks on rack in broiler pan so surface of meat is 2 - 3 inches fronuheat-.
Broil 5-6 minutes.
Seasorewith 1/4 tsp.salt.
Turn and broil 3- 4 minutes.
Season with remaining salt.
Top each steak with an equal amount of reserved cheese mixture.
Broil an additional 1 - 2 minutes.
Garnish with parsley.
Serving suggestion: Serve with steamed green beans with fresh lemon.
