Chocolate Cream Cheese Cuffins
|Granulated sugar||1⁄3 Cup (5.33 tbs)|
|Chocolate chips||1 Cup (16 tbs)|
|All purpose flour||3 Cup (48 tbs)|
|Granulated sugar||2 Cup (32 tbs)|
|Instant chocolate drink powder||1⁄2 Cup (8 tbs)|
|Baking soda||2 Teaspoon|
|Vegetable oil||150 Milliliter|
In a small bowl, mix together cream cheese, egg and sugar.
Add chipits and blend well.
In a large bowl, combine flour, sugar, chocolate powder, salt and baking soda, mixing well.
Add vanilla, vinegar, water and oil.
Beat on low speed just until well blended.
Spoon batter into prepared muffin tins, filling cups two-thirds full.
Drop 1 heaping tsp (5 mL) cheese mixture into each prepared muffin cup.
Bake in preheated oven for 20 to 25 minutes.
For a quick version of this recipe, use 1 pkg chocolate cake mix (the 2 layer size).
Mix according to package directions and bake as above.
You can use chocolate pieces or chunks in place of the chipits.
HINT: Make spice cuffins from a white or yellow cake mix by adding cinnamon, cloves and nutmeg.
