Caramelized Onion And Cheese Rounds
|Olive oil/Cooking oil||1 Tablespoon|
|Walnuts||1⁄3 Cup (5.33 tbs)|
|Herb mustard/Dijon style mustard||1 Tablespoon|
|Snipped parsley||1 Tablespoon|
|Baguette slices/French bread or other long, thin, firm bread||16|
|Shredded mozzarella cheese||1⁄2 Cup (8 tbs)|
In a large skillet cook the sliced onion in oil and margarine about 3 minutes or just till tender.
Add the chopped walnuts and the sugar.
Continue to cook and stir about 5 minutes or till onion is slightly caramelized and walnuts are lightly toasted, stir in the mustard and parsley.
Place bread slices in an aluminum pan.
Spoon onion mixture over each of the bread slices.
Sprinkle with the cheese.
If desired, cover bread slices and let stand at room temperature up to 1 hour.
Place pan in center of the cooking grill.
Grill 6 to 8 minutes or just till bottoms are toasted and onion mixture is heated through.
Watch carefully the last 2 minutes to avoid overbrowning.
