Adam's No Orange Cheese Grilled Cheese

Heres an easy stepped-up version of everyones favorite sandwich. And of course you can use orange cheese, Adam just has a strange phobia.

Ingredients

Bread slices 8 ((Sourdough))
Cheese slices 16 ((provolone, cheddar, jack, colby or a combo))
Tomato slices 16
Mayonnaise 1/2 Cup (8 tbs)
Butter 1/4 Cup (4 tbs) ((1/2 cup of spreadable butter))
Garlic powder 1 Teaspoon
Parmesan cheese 1/4 Cup (4 tbs)
Kosher salt 1/4 Teaspoon

Directions

MAKING

1. Place the tomato slices in a single layer on paper towels to allow the juices to drain. Otherwise, you’ll have soggy sandwiches and be an embarrassment to your friends. Then, in a medium bowl, thoroughly combine everything but the bread and cheese.

2. To assemble the sandwiches, place two slices of cheese on each slice of bread.

3. Put the tomato on one side and then top with the other slice of bread and cheese. Spread the outside of both sides of the sandwich with your garlic-parmesan mixture.

4. Place a large skillet over medium-low heat. (This is important, Dude. If you’re heat is too high the outside with be done, but the cheese won’t have melted, OR you’ll burn the outside waiting for the cheese to melt. Which sucks either way.)

5. Once hot, cook the sandwiches two at a time (or all at once with a grill pan). Cover the skillet with a lid. This creates steam which helps the cheese melt faster / better.

6. After a few minutes, gently shake the skillet. If the sandwich moves slightly, then it should be ready to flip and have a nice golden crust. Continue cooking on the other side covering with the lid for 2-3 more minutes until done.

SERVING

7. To serve, slice the sandwiches diagonally and then push back together. After a quick minute, you’ll get that cool pull-apart stringy cheese effect which will certainly impress your friends or friend or dog (just don’t give Fido any grilled cheese, not good for him).
