Lemon Thyme Goat Cheese with Peppercorns

Ingredients
  Goat cheese 8 Ounce (1 Log)
  Fresh thyme leaves 1 Tablespoon, chopped
  Lemon 1 , zest, juiced
  Coarsely ground black pepper 1 Teaspoon (Preferably Fresh)
  Extra virgin olive oil 2 Tablespoon (Or More As Needed)
Directions

MAKING
1. Place goat cheese, thyme, lemon zest and black pepper in a food processor.
2. Process until combined and smooth.
3. With processor running, drizzle lemon juice and olive oil through the feed tube until incorporated. Add more olive oil if you want a looser consistency.
4. Chill until firm.

SERVING
5. Serve with pita chips, crackers, baguette slices (toasted or not) or raw vegetables.
