Cantaloupe Cream Cheese Pie

Ingredients
  9 inch pie crust 1 , baked (readymade)
  Sugar 2 Cup (32 tbs)
  Cornstarch 6 Tablespoon
  Milk 4 Cup (64 tbs)
  Egg yolks 4 , beaten
  Vanilla extract 1 Teaspoon
  Cream cheese 8 Ounce, softened
  Cantaloupe melon puree 1 1⁄2 Cup (24 tbs)
  Cantaloupe melon 1 , thinly sliced
  Mint sprigs 4 (adjust quantity as needed)
  Whipped cream 1⁄4 Cup (4 tbs)
Directions

MAKING
1. In a medium sized sauce pan, combine sugar, egg yolks and cornstarch. Mix well.
2. Add milk gradually and cook on a medium flame till mixture starts to thicken, while stirring continuously.
3. Remove off flame, add cheese and vanilla extract and mix well.
4. Add cantaloupe puree, mix well and pour in baked pie crust. Refrigerate for 4 hours.
5. Place melon slices in a pinwheel fashopn on chilled pie.

SERVING
6. Serve chilled garnished with mint sprigs and a dollop of whipped cream.
