Blue Cheese Pasta Shells
|Macaroni shell||4 Ounce|
|Chopped green onions||1⁄2 Cup (8 tbs)|
|Radishes||5 , thinly sliced|
|Crumbled blue cheese||1⁄4 Cup (4 tbs)|
|Chopped fresh parsley||1 Tablespoon|
|Reduced calorie mayonnaise||1⁄4 Cup (4 tbs)|
|Lemon juice||1 Tablespoon|
1) In a pot of boiling water, cook the macaroni as per its packet instructions. Do not add any salt. Drain the pasta and set aside.
2) In a medium-sized mixing bowl, add in the macaroni, onions, radishes, blue cheese and parsley. Toss well but gently.
3) In a 1-cup glass measure, add in mayonnaise, lemon juice and pepper. Mix well and add into the pasta mixture.
4) Toss the mixture. Chill.
5) Serve the Blue Cheese Pasta Shells chilled.
