Blackcurrant Damson Plum Or Quince Cheese

Ingredients
  Pickled fruit 3 Pound, washed and cut up if necessary
  Water 1⁄4 Pint
  Sugar 1 Pound (to every pint pulp)
Directions

MAKING
1 In a closed pan, put the fruit along with water and cook very slowly until it is tender.
2 Sieve and measure.
3 To a clean pan return the pulp, along with 1 lb sugar to each pint of pulp.
4 Slowly bring to a boil so the sugar is completely dissolved before boiling point is reached.
5 Cook until a spoon drawn across the bottom of the pan leaves a clean line.

SERVING
6 In jars smeared with glycerine, pour the mixture and cover while hot.
7 Use as desired.
