Spinach Goat Cheese Pita Pizzas
|6 inch whole wheat pita bread||4|
|Roasted red peppers with garlic in oil||12 Ounce|
|Fresh goat cheese||10 Ounce (1 Log)|
|Freshly ground black pepper||To Taste|
|Baby spinach||5 Ounce (1 Package)|
1. Heat oven to 500°F. Split each pita to make 2 rounds and place cut-side up on 2 large baking sheets. Remove peppers from oil (reserving oil). Cut peppers into strips and arrange on pitas. Dot pitas with goat cheese and sprinkle with pepper.
2. Bake on bottom rack of oven until cheese is melted and golden and crust is crisp, 10 to 1 2 minutes. Let cool slightly, then top each pizza with a handful of spinach and drizzle with red pepper oil. Serve immediately.
