Broiled Spinach, Mushroom, and Goat Cheese Sandwiches

  Pine nuts 4 Tablespoon
  Olive oil 1 Tablespoon
  Garlic 4 Clove (20 gm), peeled, finely chopped
  White mushrooms 12 Ounce, sliced (Cultivated One)
  Salt To Taste
  Pepper To Taste
  Spinach 12 Ounce, washed, drained, chopped
  Sesame seed bagels 4 , halved
  Goat cheese 4 Ounce (Divided)

1. Heat the broiler
2. In a small skillet, heat the pine nuts over low heat and toast them until golden, tossing them often; set them aside
3. In a Dutch oven, heat olive oil over medium heat and saute garlic in it until soft and fragrant
4. Add mushrooms and a pinch of salt to it and saute the mushrooms till soft and all the liquid has evapourated
5. Add spinach, saute till it wilts, turn the heat off and add in pine nuts; season to taste with pepper; toast bagels and place them on a baking sheet, meanwhile
6. Distribute the pine nut mixture evenly over the magel halves, place half an ounce of goat cheese on each half and broil till the cheese melts

7. Serve as appropriate
