Chilly Cottage Cheese Mold
|Unflavored gelatin package||1 Tablespoon (1 Package)|
|Unflavored gelatin||1 Tablespoon (1 Package)|
|Pineapple juice||1⁄2 Cup (8 tbs)|
|Cottage cheese||2 Cup (32 tbs)|
|Low fat cottage cheese||2 Cup (32 tbs)|
|Strawberries||2 Cup (32 tbs)|
1 In a small saucepan, add pineapple juice and sprinkle gelatin over it.
2 Let stand for 2 minutes.
3 Over low heat, cook the juice until gelatin is completely dissolved.
4 In a blender or food processor, combine juice, cottage cheese, and strawberries.
5 Blend until smooth.
6 Transfer into a 1-quart mold. Chill until firm.
7 Unmold onto salad greens.
8 Garnish with a few fresh strawberries and mint leaves.(optional)
9 Cut 2-inch slices and place on a bed of salad greens to serve.
