Watercress Salad With Julienned Pears And Blue Cheese

Ingredients
  Watercress 1⁄4 Cup (4 tbs), stems removed (Or A Small Handful Per Person)
  Ripe cornice/Packham pears 2 , cored, sliced
  Pears 2 , cored and sliced (Cornice Or Packham)
  Crumbled blue cheese 1⁄2 Cup (8 tbs)
For raspberry vinaigrette
  Raspberry vinegar 1⁄4 Cup (4 tbs)
  Olive oil 1 Cup (16 tbs)
  Salt To Taste
  Pepper To Taste
Directions

MAKING
1) On individual serving plates, arrange some of the watercress, pears, and cheese.
2) In a mixing bowl, mix ingredients for the vinaigrette and evenly pour over the salad plates.

SERVING
3) Serve immediately or chilled.
