Cottage Cheese Spring Salad

Ingredients
  Cottage cheese 1 Pound (2 Cup)
  Chopped fresh parsley 1 Tablespoon
  Chopped fresh mint/1 1/2 teaspoons dried mint 1 Tablespoon, dried
  Chopped chives/Green-onion tops / 1 1/2 teaspoons dried chives 1 Tablespoon
  Pitted black olives/8 small 4 Large, chopped
  Salt To Taste
  Freshly ground pepper To Taste
  Diced ham 1 Cup (16 tbs)
  Cucumber 1 , diced
  Head of lettuce/Endive head 1 (To Serve:)
  Black olives 10 (To Serve:)
  Mint sprigs/Parsley sprigs 4 (For Serving)
  Parsley sprigs/Mint sprigs 6 (To Serve:)
Directions

MAKING
1. In a medium bowl into cottage cheese stir in parsley, mint, chives or green-onion tops and chopped olives.
2. Season with salt and pepper and let it stand for 15 minutes if using dried herbs.
3. Into cottage-cheese mixture stir ham and cucumber.

SERVING
4. Serve immediately, or cover and refrigerate up to 8 hours.
5. To serve, in a bowl arrange lettuce or endive leaves or on a serving platter spoon cottage-cheese salad in center.
6. Garnish with olives and mint or parsley sprigs.
