Cheese-Filled Blintzes

Ingredients
  Flour 1 Cup (16 tbs)
  Salt 1 Pinch
  Sugar 1 Teaspoon
  Baking powder 1⁄4 Teaspoon
  Eggs 4 , separated
  Cream 1 Cup (16 tbs)
  Melted butter 1 Cup (16 tbs)
  Cheese filling 1 Cup (16 tbs)
Directions

MAKING
1) In a bowl, sift the flour, salt, sugar and baking powder together
2) Beat the egg yolks and cream together and add to the flour mixture
3) Beat the egg whites till stiff and fold in 1 teaspoon of butter
4) Lightly brush the bottom of a hot 7 inch frying pan with butter
5) Scoop in the batter and tilt the pan to spread evenly
6) Cook till the edges are bubbly and then turn
7) Place them on waxed paper and repeat with the remaining batter
8) Spread the cakes with the cheese filling and fold over
9) Place them on a greased baking dish and pour over the cheese filling if remaining
10) Bake at 350F till heated through

SERVING
11) Serve warm with some berries atop
