Touch Of Green Soup with Goat Cheese Topping

Ingredients
  Cauliflower 1 Medium, cut
  Stalk celery 1 , chopped
  Leek 1 Small, thinly sliced
  Chicken broth 3 Cup (48 tbs)
  Salt 1⁄2 Teaspoon
  Pepper white 1⁄8 Teaspoon
  Dry white wine 3⁄4 Cup (12 tbs)
  Crumbled goat cheese 2 1⁄2 Ounce
  Toasted pine nuts/Pistachios 3⁄4 Cup (12 tbs), chopped
Directions

MAKING
1) In a slow cooker, add the cauliflower, celery, leek, broth, salt, pepper and wine.
2) Cook covered on LOW for about 9-10 hrs or until the vegetables are tender; puree in a blender or food processor, reheat the soup, if required.
SERVING
3) Garnish with the goat cheese and chopped nuts and serve immediately in nice soup bowls.
