Touch Of Green Soup With Goat Cheese Topping
|Cauliflower||1 Medium, cut|
|Stalk celery||1 , chopped|
|Leek||1 Small, thinly sliced|
|Chicken broth||3 Cup (48 tbs)|
|Pepper white||1⁄8 Teaspoon|
|Dry white wine||3⁄4 Cup (12 tbs)|
|Crumbled goat cheese||2 1⁄2 Ounce|
|Toasted pine nuts/Pistachios||3⁄4 Cup (12 tbs), chopped|
1) In a slow cooker, add the cauliflower, celery, leek, broth, salt, pepper and wine.
2) Cook covered on LOW for about 9-10 hrs or until the vegetables are tender; puree in a blender or food processor, reheat the soup, if required.
3) Garnish with the goat cheese and chopped nuts and serve immediately in nice soup bowls.
