Cottage Cheese-Fruit Blintzes

Ingredients
  Eggs 3
  Creamed cottage 1 Cup (16 tbs)
  Sifted flour 1⁄4 Cup (4 tbs)
  Butter 1 Tablespoon
  Raspberry jam 1⁄2 Cup (8 tbs)
  Confectioner sugar 1 Tablespoon
Directions

GETTING READY
1) Preheat griddle

MAKING
2) Using the electric mixer, beat the eggs and cottage cheese in a bowl and then add in the oil and beat well
3) Sift the flour, salt in a bowl and add to the creamed mixture
4) Grease the griddle lightly and drop spoonfuls of the batter onto the griddle making 4 inch cakes
5) Fry till they are browned on both sides
6) Place a tablespoon of jam in the center of each and roll

SERVING
7) Sprinkle with confectioner’s sugar and serve
