Orange Cottage Cheese Cups
|Unflavored gelatin envelope||1|
|Water||1⁄4 Cup (4 tbs)|
|Creamy cottage cheese||1 Pound|
|Diced fresh oranges||1 Cup (16 tbs)|
Soften gelatin in cold water.
Let stand for 5 minutes in pan of hot, not boiling, water to melt.
Stir into cottage cheese along with diced fresh oranges and salt.
Rinse 4 to 6 individual salad molds with cold water.
Fill with fresh orange cottage-cheese mixture.
Unmold and serve on lettuce beds.
