Line a flat salad platter with grated carrot.
Place pineapple slices in the centre to form a ring, and place a little grated cheese on top of each.
Shred the lettuce leaves finely and place over the remainder of the dish.
Lay thinly sliced orange round this.
Garnish dish with parsley.
