Blue Cheese Dressing
|Blue cheese||125 Gram (1/4 Lb)|
|Olive oil/Salad oil||1⁄2 Cup (8 tbs)|
|Dry mustard||1⁄2 Teaspoon|
|Lemon juice||1 Tablespoon|
|White vinegar||1 Tablespoon|
|Worcestershire sauce||1 Teaspoon|
Rub cheese through a sieve into a bowl and gradually mix in the oil.
Combine paprika and mustard with lemon juice until smooth, then stir into the cheese and oil, with vinegar, brandy and salt.
Mix thoroughly until smooth and creamy.
Chill for at least 30 minutes.
