Grilled Goat Cheese With Figs
|Ripe figs||4 Large|
|Fresh goat cheese||8 Ounce, divided into four 2-ounce rounds (Not Aged)|
|Grape leaves||8 , cleaned|
|Olive oil||2 Teaspoon|
|Salad greens||1 Cup (16 tbs), washed and spun dry (4 Handfuls)|
|Baguette slice||16 (Grilled Bread)|
|Balsamic roasted onions||1⁄2 Cup (8 tbs)|
1. Cut each fig in half lengthwise. Place each portion of cheese onto a grape leaf and top with two fig halves, cut side up. Cover each portion with another grape leaf to create a "sandwich" and secure on two sides with toothpicks.
2. Brush both sides of the leaf packets with olive oil. Grill for 2 1/2 minutes over medium coals, or bake at 350°F for 5 minutes, until the cheese is soft but not melted. Remove the toothpicks and pull back the top leaves to expose the figs.
3. Top each portion with 1 tablespoon of Balsamic Roasted Onions and serve on salad greens (tossed with oil and vinegar if desired) with four slices of grilled bread. Surround with the remaining onions.
