BAKED SALMON FILLETS WITH GOAT CHEESE AND CILANTRO

Its mouth melting baked salmon dish..It has fresh anise-flavored liquor ,goat cheese and herbs..
Ingredients
  Olive oil 4 Tablespoon
  Chopped onion 1⁄2 Cup (8 tbs)
  Garlic 1 Tablespoon, finely chopped
  Dry red wine 1⁄2 Cup (8 tbs)
  Capers 4 Tablespoon
  Fresh rosemary/1 teaspoon dried rosemary 1 Tablespoon, chopped
  Fresh oregano/1/2 teaspoon dried oregano 1 Teaspoon, chopped
  Hot red pepper flakes 1⁄8 Teaspoon
  Canned tomatoes 1⁄2 Cup (8 tbs), crushed
  Salt To Taste
  Freshly ground pepper To Taste
  Pitted black olives 12
  Boneless salmon fillets 24 Ounce (4 fillets of 6 Ounce each)
  Goat cheese 1⁄3 Pound, crumbled
  Liqour 2 Tablespoon, flavored (anise flovored)
  Fresh coriander 4 Tablespoon, chopped
Directions

Heat 2 tablespoons of the olive oil in a saucepan. Add onion and garlic. Cook briefly while stirring. Add wine, capers, rosemary, oregano, pepper flakes, tomatoes, salt, pepper and olives. Bring to a boil and simmer 5 minutes. Pour 1 tablespoon of the oil in a baking dish large enough to hold the fish in one layer. Arrange fish skin side down. Sprinkle with salt and pepper. Pour the tomato sauce around the fish fillets. Brush the top of the fillets with the remaining 1 tablespoon oil and the cheese. Bake in a preheated 475 degree oven for 5 minutes. Sprinkle with the anise-flavored liquor . Switch to the broiler and broil for 5 minutes. Do not overcook. Sprinkle with cilantro the and serve immediately.
