Fruit and Cheese Subs
|Non fat herb and garlic cream cheese||14 Tablespoon, divided|
|Minced dill weed||1 Tablespoon|
|Non fat creamy cucumber dressing||1 Tablespoon (commercial)|
|Finely chopped peaches||1 Cup (16 tbs), peeled|
|Finely chopped cucumber||1 Cup (16 tbs), seeded|
|Chopped almonds||3 Tablespoon, toasted|
|Italian bread loaf||16 Ounce (1 loaf)|
|Green leaf lettuce leaves||6|
|Low fat havarti cheese||5 Ounce, thinly sliced|
1. Combine 1/4 cup cream cheese, dillweed, and dressing. Add peaches, cucumber, and almonds; stir well.
2. Slice bread in half horizontally. Hollow out center of each half, leaving 1-inch-thick shells. Reserve inside of bread for another use.
3. Spread remaining 1/2 cup plus 2 tablespoons cream cheese over cut sides of bread. Place lettuce leaves on bottom half of bread. Spoon peach mixture over lettuce. Place cheese slices over peach mixture, and top with remaining bread half. Cut loaf into 8 slices.
