Cheese & Olive Calzones

Ingredients
  Pizza crust 1 (1 recipe Traditional)
  Onion 1 Medium, finely chopped
  Crumbled dry basil 1⁄2 Teaspoon
  Olive oil 1 Tablespoon
  Black pepper 1⁄2 Teaspoon
  Ricotta cheese 2 Cup (32 tbs) (at room temperature)
  Grated parmesan cheese 1⁄2 Cup (8 tbs)
  Shredded mozzarella cheese 1 1⁄4 Cup (20 tbs)
  Sliced green olives 1⁄2 Cup (8 tbs), drained
  Sliced black olives 1⁄2 Cup (8 tbs), drained
  Pimentos 4 Ounce, sliced and drained (1 jar)
Directions

Prepare dough for pizza crust.
While dough is rising, prepare filling: In a small skillet, saute onion and basil in olive oil until soft. Remove from heat and combine with all remaining ingredients. Set filling aside.
Assemble and bake as instructed for Spinach Calzones.
