Wash the fruit and remove the stalks.
Put the fruit in the pressure cooker with the water.
Put on the lid and bring to medium (10 lb) pressure.
Cook for 5 minutes.
Reduce pressure slowly.
Sieve the fruit, discard the stones and weigh the pulp.
Return to the cooker and heat gently, uncovered.
Meanwhile weigh the sugar, allowing 350 g (12 oz) to each 450 g (1 lb) fruit pulp, and warm it.
Remove the cooker from the heat, add the sugar and stir until it is dissolved.
Then return the uncovered cooker to the heat, and boil the contents rapidly, stirring all the time, until setting point is reached.
Remove the cooker from the heat, allow the contents to settle, then pot and cover.
