Tomato Nicoise Fondue
|Butter||1⁄4 Cup (4 tbs)|
|Tomatoes||1⁄2 Pound, quartered|
|Garlic||1 Clove (5 gm), crushed|
|Onion||1 Small, chopped|
|Canned pimientos||6 Ounce, drained and chopped (1 Can)|
Melt butter in a medium-size saucepan, add tomatoes, garlic, onion and pimientos and cook over medium heat 10 to 15 minutes or until soft.
Press mixture through a sieve into a bowl, season with salt, pepper and a dash of sugar and allow to cool.
Blend in mayonnaise.
Pour Tomato Nigoise into a serving bowl, place on a large platter and arrange vegetables around.
