Melted Cheese with Peppers
|Fresh tomato salsa||1⁄2 Cup (8 tbs)|
|Chihuahua cheese/Farmers cheese/jack cheese||8 Ounce, shredded (2 Cups)|
|Oregano leaves||1⁄4 Teaspoon|
|Thin green pepper strips||10|
|Thin onion strips||10|
|Whole wheat tortillas/Corn tortillas||6 , warmed|
Prepare salsa and set aside.
Toss together cheese and oregano; set aside.
Place green pepper and onion on a 7-inch rimmed microwave-proof plate.
Cover with heavy-duty plastic wrap and microwave on HIGH (100%) for 2 minutes or until vegetables are soft.
Sprinkle cheese mixture over vegetables.
Microwave, uncovered, on MEDIUM (50%) for 4 minutes or just until cheese is melted.
To assemble, spread cheese mixture on a tortilla, spoon on a few tablespoons of salsa, roll up, and eat out of hand.
