Cottage Cheese Topping

Ingredients
  Small curd low fat cottage cheese 1 Pint (2 Cups)
  Finely grated carrot 1⁄2 Cup (8 tbs)
  Grated radish 1⁄4 Cup (4 tbs)
  Chopped sweet green pepper 1⁄4 Cup (4 tbs)
  Thinly sliced green onions 1⁄4 Cup (4 tbs) (Including Some Green Tops)
  Salt 1⁄4 Teaspoon
  Black pepper 1⁄4 Teaspoon
Directions

1. Microwave the cottage cheese in a 1-quart microwave-safe bowl on Low Power for 3 to 4 minutes, stirring every minute, until the cottage cheese is just warmed to room temperature. (Heating the cottage cheese avoids cooling off the hot potatoes. Watch carefully, however, because over-heating can cause the cheese to separate.)
2. Stir in the grated carrot, radish, chopped green pepper, green onion, salt and pepper, mixing well. Divide the topping evenly over the opened potatoes.
