Turkey Filets with Goat Cheese
|Olive oil||10 Milliliter (2 Teaspoon)|
|Butter||10 Milliliter (2 Teaspoon)|
|Turkey fillets||1 1⁄2 Pound (750 Gram)|
|Endives||4 Medium, washed|
|Chopped shallots||25 Milliliter (2 Tablespoon)|
|Dry white wine||250 Milliliter (1 Cup)|
|Chicken stock||375 Milliliter, skimmed of fat (1 1/2 Cup)|
|35% cream||125 Milliliter (1/2 Cup)|
|Goat cheese||125 Milliliter (1/2 Cup)|
|Melted butter||5 Milliliter (1 Teaspoon)|
|All purpose flour||5 Milliliter (1 Teaspoon)|
|Pecans||1 Ounce (As Garnish)|
|Grapes||2 Ounce (As Garnish)|
Preheat the oven to 350°F (180°C).
In a large ovenproof skillet, heat the oil and melt the butter.
Add the turkey filets and endives; season and cook for 2 to 3 minutes on each side.
Add the shallots, cluster of spices, white wine and chicken stock.
Place in the oven and bake for approximately 10 to 12 minutes.
Remove the turkey filets and endives; keep warm.
Return the pan to the stove top and incorporate the cream, goat cheese and the mixture of butter and flour.
Let simmer until thick.
Serve the endives, garnished with the sliced turkey filets.
Cover with the goat cheese sauce, and garnish with the grapes and pecans.
